Ingredients

  1. 1 lbsausage
  2. 1 cupuncooked rice
  3. 2 1/2 cupchicken broth
  4. 1/2 mediumonion, diced
  5. 2 cloveminced garlic
  6. 1 tbspdiced celery
  7. 1/4 cupdiced bell pepper
  8. 1salt and cayenne to taste
  9. 1 tbspflour

Steps

  1. 1

    cut up sausage and brown in a large pot

  2. 2

    heat 1 T. oil and cook onion, garlic, bellpepper, and celery til they wilt or turn soft

  3. 3

    now add flour and cook for about 5-7 minutes more or til flour turns the color you like, stirring constantly

  4. 4

    add 1 cup of uncooked rice and all the chicken broth , now bring it to a rolling boil and stir again

  5. 5

    once its boiling good turn temperature down to low and cover

  6. 6

    after 30 minutes uncover, stir and serve

  7. 7

    its important here to NOT open the lid for at least 30 minutes, as it will stop the steaming and rice will not cook through
