cut up sausage and brown in a large pot

heat 1 T. oil and cook onion, garlic, bellpepper, and celery til they wilt or turn soft

now add flour and cook for about 5-7 minutes more or til flour turns the color you like, stirring constantly

add 1 cup of uncooked rice and all the chicken broth , now bring it to a rolling boil and stir again

once its boiling good turn temperature down to low and cover
- 6
after 30 minutes uncover, stir and serve

its important here to NOT open the lid for at least 30 minutes, as it will stop the steaming and rice will not cook through
