These are a family favorite. I never make a single batch! They freeze well by layering with wax paper between layers. Make plenty as they go fast.
Cooking Instructions

Mix wet ingredients together until well mixed

Mix dry ingredients together
- 3
Gradually add dry ingredients and mix with wet ingredients to create dough. If necessary add extra flour depending on size of bananas. Optional: Chopped walnuts can be added if desired

Preheat oven to 350°F.

Drop by Tablespoon on greased cookie sheet. Bake for 12 minutes or until tops of cookies are slightly brown.

For icing: When cookies are cool, combine brown sugar, evaporated milk (or cream), and butter in sauce pan and bring to boil.

Remove from heat. Add powdered sugar until spreading consistency.

Add vanilla and quickly ice cookies as icing will harden as it cools.

I like soy pulp cookies, so I often made this. Instead of sugar, I would put a banana in it because it tastes better when baked. These are soft cookies so it's very easy to eat even for children.These cookies looks like icebox cookies and just you would imagine, you chill the dough in the refrigerator. However, be careful not to put them in for too long. If you do, they will become too hard to cut. I think 30 minutes is enough. If you don't want to chill the dough, you could easily form them by hand. They should be about 5 mm wide or less. Depending on your oven and how moist the soy pulp is, be sure to adjust the baking time accordingly and be careful when you bake them! Also make sure your banana is ripe!
