  • 2 lbBone-in chicken thighs, skin removed
  • 1 1/2 lbSmall red potatoes, cubed
  • 2 tspPaprika
  • 1 1/2 tspCrushed rosemary
  • 1 tspMinced garlic
  • 1/2 tspBlack pepper
  • 2 tbspOlive oil
  • 1 tspSalt

    Preheat oven to 425°F

  2. 2

    Mix all spices, oil, and salt in large bowl.

  3. 3

    Add chicken and potatoes and toss to coat well.

  4. 4

    Arrange in single layer on foil-lined baking pan coated with nonstick cooking spray

  5. 5

    Roast for 30 minutes or until chicken is cooked and potatoes are tender, turning potatoes occasionally.
