Ingredients

  • 3 lbPork Butt Roast, bone removed
  • 3 tbspOlive Oil
  • 3 tbspGarlic, Minced
  • 2 tbspItalian Seasonings
  • 1 tbspSea Salt
  • 1 tbspCracked Black Pepper
  • 1Orange Zest from med. Orange
  • 2 tspFennel Seeds
  • 2 tspChili Flakes
  • 1Salt
  • 1Pepper
  • 1Porcinis
  • 1 cupBeer
  • 1Mozzerella Cheese
  • 1Provelone Cheese
  • 1Cherry Tomatoes, sliced in half
  • 6Hoagie Buns, toasted

  1. 1

    Sprinkle liberally with salt and pepper on fatty side of pork butt. Flip over.

  2. 2

    Rub inside, meaty side, with garlic, italian seasoning, sea salt, cracked pepper, fennel seed, chili flake, and orange zest. Sprinkle with approx. 2 tbls. olive oil.

  3. 3

    Roll up fatty side out and secure. Cover and refrigerate overnite.

  4. 4

    Bake at 350° for about 5 hours covered, uncover and cook 1/2 hour longer.

  5. 5

    Cool slightly and cut into thin slices.

  6. 6

    Heat in pan with beer and sliced porcinnis, heat through.

  7. 7

    Top with cheeses and allow to melt. Transfer to toasted hoagies and top with sliced cherry tomatoes.

  8. 8

    *suggestion: spread basil pesto aioli to hoagie, add fresh fried sweet potato fries on the side, and pop a top. * add onions, peppers, sauteed mushrooms.
