Allow eggs to stand at room temperature for 30 minutes. Meanwhile greas two 8*1-1/2 inch cake pans, line pans with baking paper and greas with oil. Set aside.

Preaheat ove to 350°F (175 C). In a large bowl stir together the dry ingredient's. Set that a side. In another bowl stir together oil,carrots(I used 4 cups), eggs then add that to the flour mixture pour batter into prepared pans and bake 30-45 minutes or until a bamboo stick, inserted in the center comes out clean.

When baked let cool completlie and frost with cream cheese frosting
