Ingredients

  • 2 cupelbow pasta, cooked until almost al dente
  • 8 ozcheddar, 1/2 cubed, 1/2 shredded
  • 8 ozcolby cheese, cubed
  • 8 ozmonterey pepper jack cheese, cubed
  • 2 tspall-purpose flour
  • 1/2 tspsalt
  • 1/2 tspground black pepper
  • 1/2 tspcayenne pepper
  • 1/2 tspdry mustard
  • 1 pinchground nutmeg
  • 4 tbspsour cream
  • 1 largeegg, beaten
  • 1 cupheavy cream
  • 1 cuphalf-and-half
  • 1/4 cupfinely chopped onion

    preheat oven to 350°F.

  2. 2

    In a large bowl toss together the pasta with the cheese cubes and pour into a 2-quart baking dish.

  3. 3

    In a large bowl mix together the flour, salt, black pepper, cayenne pepper, dry mustard, and nutmeg. Add the sour cream, egg, heavy cream, half-and-half, and onions.

  4. 4

    Pour over the pasta and cover with the shredded cheddar cheese. Bake uncovered until the top is just beginning to brown, about 40-45 minutes.
