Ingredients

4 mins
  • 4 largeyellow peppers, tops cut off and deseeded, membranes removed
  • 1 cupmilk
  • 2 tbspbutter
  • 1 cupfresh breadcrumbs
  • 1 smallcan sweetcorn
  • 1 mediumegg, beaten
  • 125 gramsgrated cheese
  • 4 tspdried breadcrumbs

Steps

  1. 1

    heat milk and butter until butter is melted.

  2. 2

    remove from heat add fresh breadcrumbs, corn, eggs, seasoning and half the cheese

  3. 3

    pour mixture 3/4 full into each pepper.

  4. 4

    sprinkle over 1 tsp of dried breadcrumbs and top with remaning cheese

  5. 5

    bake for 40 mins in a preheated oven at gas 4 , 180C
