Ingredients

  1. 3/4 lbelbow macaroni
  2. 6 cupshredded cheddar cheese (all or combo of smoked, sharp, or meduim)
  3. 2 canevaporated milk (12 ounce)*
  4. 2 cancheddar cheese soup (10 3/4 ounce)
  5. 4 tbspunsalted butter, cut into small pieces
  6. 2eggs
  7. 1 tspkosher salt
  8. 1fresh black pepper, to taste
  9. 1/2 tspdry or dijon mustard*
  10. 1dried parsley (for sprinkling on top)

Cooking Instructions

    In a large pot of boiling, salted water cook the pasta to al dente and drain. Return to the pot and melt in the butter. Toss to coat.

    Whisk together the eggs, milk, hot sauce, salt, pepper, and mustard. Stir into the pasta and add the cheese. Over low heat continue to stir for 3 minutes or until creamy.
