Ingredients

  1. 8 cupcollard greens (1 bunch), tough stems removed and cleaned well
  2. 1 mediumonion (sliced or chopped)
  3. 4garlic cloves, minced
  4. 1 tbspolive oil
  5. 4 slicecooked bacon, cut into small pieces
  6. 1/4 cupcubed ham (can use prepackage mini cubes)
  7. 1 tspcrushed red pepper flakes
  8. 1 tspkosher salt
  9. 1 tsppepper
  10. 1 1/2 cupchicken stock
  11. 1/4 cuplight brown sugar (optional)
  12. 1balsamic vinegar (optional)

  1. 1

    Brown bacon add optional sugar to fried bacon.

  2. 2

    In a deep pot sauté onion and garlic with olive oil; until onions are lightly brown

  3. 3

    Add collards layering with spices to fried bacon add broth and cover pot and cook until tender over medium heat for about 30 minutes.(Or cook in the slow-cooker on high for 4 hours or until greens are tender.)

  4. 4

    Taste and adjust seasonings. Serve with balsamic vinegar, optional.
