Ingredients

  1. Egg mixture
  2. 6eggs
  3. 1 cupmilk
  4. 1/4 cupolive oil
  5. 1/4 cupfresh chopped rosemary
  6. 1/2lemon, juice of
  7. 1sea salt and pepper
  8. 1/4 cupsugar
  9. Veggies
  10. 1/4red pepper, chopped
  11. 1roma tomato, sliced thinly in circles
  12. 1/4 cupchopped spinach
  13. 10spinach, whole leaves
  14. 1/4 cupbroccoli, small florets
  15. 1/4 cupgreen onion or chives, chopped finely
  16. 1/4 cupold cheddar cheese (or jarlsburg), grated

Cooking Instructions

    Preheat oven to 350°F

    Whisk all egg ingredients together in medium bowl. (rosemary will float on top)

  3. 3

    Grease a 9" diameter, 2" deep baking pan with olive oil.

  4. 4

    Arrange and layer veggies in pan. start with leaf spinach and tomatoes, then broccoli, then pepper, then sprinkle chopped spinach, and finally cheese.

    Slowly pour egg mixture evenly around over top of veggies and cheese.

    Bake at 350°F for 45-60 min, until egg completely cooked in centre
