These cookies are pretty simple to make, can be frozen for future cookie baking (see step 4) and are delicious, rich and decadent. Best served with a cup of cold milk. These cookies are like mint chocolate chip ice cream in a cookie! Cook them just until set for an amazing chewy cookie, add a few minutes more if you prefer them crisp. They freeze great so can be made in advance, just cool completely and individually wrap.

I just recently came across these dark chocolate chips filled with delicious mint. They make a great chocolate chip cookie with the refreshing mint. I added peanut M&Ms for a red/green Holiday cookie but any can be used or omitted if nuts are not wanted!

My son love the flavor combination of mint & chocolate, so I made these for him on St. Patrick's Day.
