Avocado, Goat Cheese, and Pecan Tossed Salad

Place mixed greens, goat cheese, and pecans in a large bowl.

Cut avocados open lengthwise with an heavy duty knife, and pull halves apart. Cupping one half in your hand, wiggle the edge of your knife into the pit. Twist, and pull the pit from the avocado. Pinch the pit from the back side of your knife, and the pit will pop off of the blade.

Cube avocado flesh and add to bowl.

Remove dirt and stems from mushrooms, then slice into quarter inch pieces.

Add olive oil, salt, and pepper, then toss ingredients together.

Drizzle in dressing or balsamic vinegar if desired. Though I simply add a pinch more salt and enjoy without dressing. Enjoy!
