Soak the rice for 30 minutes.

Grind the coconut flesh with little amount of water to make it into a fine paste.

Boil 1 cup on water and add the ground coconut paste into it and set it aside for 10 minutes.

Later, take a very thin cloth to squeeze out the coconut milk from the paste. Now, the coconut milk is ready.

Heat oil in a pressure cooker and add cardamom, cinnamon stick, cloves, green chillies and onion.

Saute the onions and then add mint leaves and garlic. Saute for another 3 minutes.

Now add 2 cups of coconut milk to it and cook for a minute.

After a minute, add soaked basmati rice and salt as required.

Close the lid and wait until pressure is released well.

Now fix the whistle on to the lid and keep the flame too low.

Cook for 10 minutes exactly on the low flame and then switch it off.

Do not open the lid immediately. Let it rest for a while and then you are good to go. If you want it spicy you can add extra green chillies.
