Ingredients

1 tbspbutter
3large leeks, thinly sliced
2 1/2 lbpotatoes, peeled and thinly sliced
5 cupchicken broth

Melt butter in large pot

Place leeks in pot and saute over medium heat for 5 minutes. If they begin to brown, add 1 tablespoon of water

Add the potatoes and the broth. Bring to a boil and simmer 30 minutes.

Puree the soup, add salt, if needed. Serve warm
