Ingredients

  1. 1 tbspbutter
  2. 3large leeks, thinly sliced
  3. 2 1/2 lbpotatoes, peeled and thinly sliced
  4. 5 cupchicken broth

Steps

  1. 1

    Melt butter in large pot

  2. 2

    Place leeks in pot and saute over medium heat for 5 minutes. If they begin to brown, add 1 tablespoon of water

  3. 3

    Add the potatoes and the broth. Bring to a boil and simmer 30 minutes.

  4. 4

    Puree the soup, add salt, if needed. Serve warm
