Saute the onion in olive oil in a large pot with the cover on, on medium-low for about 5 minutes, or until tender.

Add carrots and cook on medium-low for another 5 minutes.

Add garlic and mushrooms and continue to cook another 10 minutes.

Add broth and salt. Simmer 30 minutes

Puree soup. Stir in milk. Serve warm
