preheat oven to 200°F celcius.

halve and remove pip from avocado. Depending on the size of the avocado it might be neccesary to remove extra pulp to make a space big enough for the egg to sit in.

Place avocado halves in a baking dish which will prevent them from tipping.
Place an egg in each avocado half.

If desired, spread a little vegemite across the avocadoes.

Sprinkle grated parmesan over the top of the egg and avocado
- 6
Bake for around 10 minutes, or until egg is cooked, with a runny yolk.

Serve on a bed of rocket, drizzled with olive oil.
