Cinnamon Roll Pancakes

My kids are addicted to cinnamon rolls! It gets boring eating the same thing over and over so we came up with some creative ways of eating cinnamon rolls.

My kids are addicted to cinnamon rolls! It gets boring eating the same thing over and over so we came up with some creative ways of eating cinnamon rolls.
Steps

For the pancakes: Mix dry ingredients (first 4) in one bowl and wet ingredients (next 4) in a separate bowl.

Slowly whisk the wet ingredients into the dry ingredients until moistened, leaving a few lumps. Set aside.

For cinnamon filling: Mix all ingredients together. (brown sugar, cinnamon, 1/4 cup butter)

Place in piping bag or Ziploc bag and snip the corner. Set aside.

For the glaze: In a microwave safe bowl, melt butter and cream cheese. Stir together. Add vanilla.

Whisk in powdered sugar and vanilla. (You can add milk if necessary to create a glaze consistency.)

To make it all come together. Heat griddle to 325.

Make desired size pancake on griddle.

Using the piping bag, create a cinnamon swirl starting at the center of the pancake.

When the pancake has a lot of little bubbles, flip and cook for a few minutes on that side.

Remove from griddle and glaze with cream cheese icing. Serve immediately.

Notes: This can be made with box mix pancakes. I have used the box when I was in a hurry and they turned out fine. The cinnamon/sugar mix will create small craters in the pancakes...which are perfect to hold the glaze! Also, if you have any of the sugar/cinnamon mix leftover, it keeps well in the fridge so you can use it again the next time your pancakes need a kick! Enjoy!
