Ingredients

  1. 1/2 smallonion
  2. 1 tbspvegetable oil
  3. 1 1/2 cupdiced button mushroom
  4. 1 largepotato, peeled and diced
  5. 1/2 cupunsalted vegetable stock
  6. 2 cupspinach

Steps

  1. 1

    Sauté the onion in the oil until soften

  2. 2

    Add the mushrooms and sauté for 2-3 minutes

  3. 3

    Add the potatoes and pour in the stock

  4. 4

    Bring to a boil, then cover and simmer for 10 minutes

  5. 5

    Add the spinach and cook for 2-3 minutes

  6. 6

    Mash with a fork or puree in a food processor
