  1. 32 ozchicken broth
  2. 2 candiced tomatoes (14 1/2 oz each)
  3. 1 canwhole kernel corn
  4. 1 tbspchopped cilantro
  5. 1 tspground cumin
  6. 1 1/3 cupFrench fried onions
  7. 3/4 cupcrushed tortilla chips
  8. 3/4 cupshredded Monterey jack cheese

Cooking Instructions

  1. 1

    Combine broth, tomatoes, corn, cilantro, and cumin in a large saucepan. heat to boiling over medium-high heat; reduce heat to low. simmer, uncovered, 10 minutes to blend flavors

    To serve, place French fried onions, chips, and cheese in bottom of soup bowls, dividing evenly. ladle soup mixture on top
