I was actually taught how to make this in my highschool home ec. class but it was with eggplant instead of zucchini, yuck. When I got home I changed the recipe since I don't care for eggplant and its now a household favorite!

I was actually taught how to make this in my highschool home ec. class but it was with eggplant instead of zucchini, yuck. When I got home I changed the recipe since I don't care for eggplant and its now a household favorite!

Ingredients

  1. 1green zucchini
  2. 1yellow squash
  3. 1 packagesspaghetti noodles
  4. 2Jars spaghetti sauce
  5. 1 packagesmozzarella cheese
  6. 1egg
  7. 1/4 cupmilk
  8. 1 cupflour
  9. 1basil
  10. 1salt
  11. 1thyme
  12. 1pepper
  13. 1garlic powder
  14. 1vegetable oil

Cooking Instructions

    Cook and Drain noodles. Preheat oven to 350

  2. 2

    In med. bowl beat milk and egg together and set aside.

  3. 3

    On a plate combine flour and seasonings and mix together.

  4. 4

    Cut up zucchini and squash in chips and dip in the egg mixture then coat in the flour mixture. Repeat until all pieces are coated.

    In skillet heat oil. Fry zucchini and squash chips until crispy on both sides. Repeat until gone.

    Combine one jar of sauce with the noodles and pour into a baking dish.

  7. 7

    Pour second jar of sauce over the top and layer with alternating zucchini and squash chips. Top with cheese and bake until melted.
