Ingredients

  • 16 ozboneless chicken breast, cooked & shredded
  • 8 ozSour cream
  • 1/4 cupmilk
  • 10 3/4 ozCream of chicken soup
  • 1 tbspcilantro
  • 10 ozRotel tomatoes & green chiles
  • 1 cuponion, diced
  • 8 each9 in tortillas
  • 1/2 cupMexican shredded cheese
  • 4 ozdiced green chiles

  1. 1

    Preheat oven to 350. Lightly coat 8x11 baking dish w/ nonstick cooking spray & set aside.

  2. 2

    In saucepan, mix sour cream, soup, milk & cilantro. Heat through & set aside - do not let it boil!

  3. 3

    Spray skillet w/ nonstick cooking spray. Add chicken, Rotel, onions & green chiles, cook until onions are transparent

  4. 4

    Warm tortillas until flexible.

  5. 5

    Fill ea. tortilla w/ about 2 tbsp of chicken mixture. Roll the tortilla up & place seam side down in baking dish.

  6. 6

    Pour/spread sauce over enchiladas & top w/ cheese.

  7. 7

    Bake for 25-30 min until cheese is bubbly.
