Combine the water and seasonings in a pot, bring to a boil, then turn off the heat and cool.

Rinse the beans and add them to the pot. Let sit overnight.

Heat the pot once again. Once it comes to a boil, skim off the scum, add a drop lid, reduce to low heat and simmer for 1 hour or until it reaches your desired tenderness.

When the beans become tender, turn off the heat, then allow them to cool in the simmered water. Once the flavors blend in, they're ready!
