Split the brinjals in the centre to make criss cross and soak them in salty water for 8-10 mins.

Mix all dry masalas and 1 tsp of oil for stuffing.

Fill this masala mixture in all the mushrooms and brinjals.

Heat oil in a pan and add cumin seeds when it crackles add onion,ginger,garlic,green chilli and left stuffing mix and saute them well for 5 mins.

Now add stuffed brinjals and mushrooms and mix gently.

Cover it with lid and cook them on medium flame for 10-15 mins and stir in regular intervals of 5-7 mins.

Now add chopped tomatoes and cook for 3-4 mins.

Now turn off the heat and garnish it with fresh coriander leaves and serve this yummy and spicy stuffed brinjal mushrooms masala with vhapati, naan or parantha.
