Ingredients

  • 3 lbPork tenderloin
  • 4Butter potatoes
  • 1 canWhole cranberry sauce
  • 3/4 cupDried Apricots (coarse chop)
  • 1/2 cupSugar
  • 3/4 cupApricot nectar
  • 1 tspDry mustard
  • 1/2 tspRed pepper flake

  1. 1

    Slice and the quarter potatoes into 1/2 inch wide pieces and place in crock pot.

  2. 2

    Set pork tenderloin on top of potatoes.

  3. 3

    In a mixing bowl, combine dried apricots, cranberry sauce, sugar, apricot nectar, dry mustard and red pepper flakes and mix well.

  4. 4

    Pour mixture over pork tenderloin and potatoes.

  5. 5

    Cook for 6 hours on low setting, making sure the pork reaches 160°F Fahrenheit.

  6. 6

    Remove pork from crock pot and allow to rest on cutting board at least 5 minutes. Slice and serve with potatoes.
