  1. 1 tspUnsalted butter
  2. 1 cupChopped onions
  3. 1 cupChopped celery
  4. 3 cupPotatos, boiled, peeled, diced
  5. 1Bayleaf
  6. 2 cupChicken broth, non-fat, reduced sodium
  7. 1 1/2 cupCanned diced tomatoes with juice
  8. 1 1/2 cupFrozen corn, thawed
  9. 1 1/2 cupMilk
  10. 1Fresh ground black pepper
  11. 1/2 cupChopped fresh flat leaf parsley

Steps

  1. 1

    Spray 4-5 quart pot with cooking spray

  2. 2

    Add butter and heat over medium burner

  3. 3

    Add onions and cook for 5 minutes

  4. 4

    Add celery and potatoes, cook for 2 minutes

  5. 5

    Add bayleaf and chicken broth, bring to simmer

  6. 6

    Cover and cook for 20 minutes

  7. 7

    Remove bayleaf, puree 2 cups soup and return to the pot

  8. 8

    Stir in tomato, corn, and milk. Bring to simmer stirring for 5 minutes

  9. 9

    Add black pepper to taste, garnish with parsley
