  1. lamb canon
  2. 400 gramssaddle of lamb
  3. 1 tbspfennel seed
  4. 2 tbspdried herbs de Provence
  5. 100 mlrapeseed oil
  6. 3 tbspDijon mustard
  7. 75 gramstoasted and crushed croutons
  8. herb crust
  9. 1 tbspmint
  10. 1lemon zested
  11. 2 tbspparsley
  12. sauteed spinach
  13. 200 gramsspinach
  14. 1 slicebutter
  15. 1 clovegarlic

30 mins
  1. 1

    mixed fennel seed, herbs and oil together

  2. 2

    cover lamb with mixture

  3. 3

    cook in frying pan with little oil 8-10min each side

  4. 4

    wrap lamb in tin foil and sit for another 10 min

  5. 5

    mix lemon zest, parsley, mint, and crouton together

  6. 6

    brush lamb with Dijon and roll in the herb crust

  7. 7

    butter on pan add garlic

  8. 8

    cook spinach, salt and pepper and simmer
