Ingredients

  • 1 lbChicken Tenders
  • 2 largeEggs, beaten
  • 1 cupItalian bread crumbs
  • 1 tbspUnsalted butter
  • 1/4 cupOlive Oil
  • 1/2 cupOnion, roughly chopped
  • 1 largeAnaheim chili, chopped
  • 2 cloveGarlic, chopped
  • 1 ozPackage Porcini mushrooms, reconstituted in white wine
  • 1/3 cupLow sodium chicken broth
  • 1/3 cupDry white wine
  • 1 packagesMuenster cheese slices
  • 1Kosher salt and ground black pepper

  1. 1

    Soak chicken in eggs overnight or at least 4 hours.
    Preheat the oven to 350°F
    Roll pieces of chicken in bread crumbs.
    Saute the onion, chili, mushrooms and garlic in the butter, then remove from the pan.
    Saute the chicken in the olive oil combination until lightly browned.
    Put the chicken in a buttered casserole. Cover with the sautéed mushrooms
    and with the chicken broth and white wine.
    Bake uncovered for 30 minutes, covering the chicken with muenster
    cheese for the last 10 minutes.
