  2. 1 lbBoneless Chicken, trimmed and cubed
  3. 1Sesame Seeds
  4. Chicken Batter
  5. 2 tbspCornstarch
  6. 2 tbspFlour
  7. 1/4 tspBaking Powder
  8. 1/4 tspBaking Soda
  9. 2 tbspSoy Sauce
  10. 3 tbspWater
  11. 1 tspVegtable Oil
  12. 1 tspSesame Oil
  13. Sauce
  14. 1 canPineapple Chunks
  15. 1 cupPineapple Juice from can of Pineapple Chunks
  16. 1/2 cupWater
  17. 2 tbspOrange Juice
  18. 2 tbspSoy Sauce
  19. 1 tbspVinegar
  20. 1/2 cupSugar
  21. 1 tbspSesame Oil
  22. 1 tspGarlic Salt
  23. 1/4 cupCornstarch

Cooking Instructions

    For the batter. Blend flour, cornstarch, baking soda, and baking powder. Then add soy sauce, water, vegetable oil, and sesame oil. Whisk until smooth.

    Add cubed chicken to batter. Stir until evenly coated. Cover and refrigerate for 15 minutes.

    While the chicken is marinating, in a saucepan combine pineapple juice, water, soy sauce, sugar, sesame oil, garlic salt, orange juice, and cornstarch. Whisk over medium heat until smooth and bubbly.

    Add pineapple chunks to sauce and let simmer on low about 10 minutes or until chicken is fried.

    Heat oil to 375°F.

    Drop battered chicken, a few pieces at a time, into oil. Stirring after each addition to avoid clumping. Fry until golden brown. Let drain on paper towel covered plate.

    Add fried chicken to pineapple sauce and fold in gently.

    Sprinkle sesame seeds to chicken before serving.
