Ingredients

  1. 2 headscauliflower, cut into pieces and fried
  2. 3potatoes, sliced into rounds and fried
  3. 3carrots, fried
  4. 1.1 lbsbasmati rice, rinsed (about 2 1/2 cups or 500 grams)
  5. kabsa spice mix
  6. salt
  7. garlic powder
  8. onion powder
  9. pinchcurry powder
  10. 1tomato, chopped

Steps

  1. 1

    Rinse the rice and season it with salt and spices.

  2. 2

    Prepare all the fried vegetables and drain them well from the oil.

  3. 3

    Place a layer of tomato at the bottom of the pot to prevent the vegetables from burning.

  4. 4

    Add a layer of cauliflower, then a layer of potatoes, then a layer of rice. Repeat with another layer of cauliflower, potatoes, carrots, and the remaining rice.

  5. 5

    Slowly pour water over the layers to avoid disturbing them.

  6. 6

    Bring to a boil over high heat, then reduce to low, cover the pot, and cook until the rice is done and the water is absorbed.

  7. 7

    You can add meat or chicken if you like, but I didn't. Enjoy!
