
Spanicopita (spinach Pie)

Chop your onion and start to caramilize it, chop the garlic finely and add it to the frying pan.

Wash the spinach and pat dry with towel, a handful at a time add the spinach to the frying pan. Let simmer until spinach is cooked and the water has evaporated. Leave the pan until it has cooled down a bit, then squeeze out the execs liquid and put in to a medium sized bowl.

Next beat the eggs and add the parmaseon to the eggs and mix in with the cooked spinach. Add the feta cheese and the salt and pepper.

Get a pan out and your Philo pastry. With a brush cover the inside of the pan with olive oil and put a sheet of Philo in the pan and repeat until you have around 20 sheets

Put the spinach filing in the pan, layer the Philo pastry on top of the filling using the same technique as before.

Bake 30-40 minutes at 350°F Fahrenheit. It's ready when you stick a knife in the middle and it comes out clean.
