Ingredients

2 servings
  • 1/2 cupchicken or pork cut into cubes
  • 1 packagesfrozen udon noodles
  • 1/2 cupfrozen peas
  • 1 mediumonion
  • 3 tbspfermented black bean paste, found at Asian supermarkets
  • 2 cupwater or chicken stock
  • 1 dashblack pepper
  • 1 dashhot pepper flakes
  • 4 slicecucumber for garnish
  • 3 tbspcornstarch or potato starch

Steps

  1. 1

    in a skillet, brown chicken or pork until fully cooked

  2. 2

    Add your onion, cook until translucent

  3. 3

    Add frozen peas, let cook for 3 minutes

  4. 4

    make room in center of skillet, add black bean paste and cook for 3 minutes while stirring, do not mix paste with rest of ingredients,let paste cook until it is no longer bitter

  5. 5

    stir all ingredients together

  6. 6

    Add water, let cook for 10-15 minutes

  7. 7

    Add your starch to 6 tablespoons of water, stir until dissolved

  8. 8

    Add starch to pan stir until thick

  9. 9

    follow package directions on how to cook udon

  10. 10

    after mixture is thick, place Udon in dish and pour mixture on top, garnish with cucumbers, mix and enjoy
