Ripe plantains
Diced tomatoes
Diced red peppers
Seasoning

Roast plantain in the oven for 30minutes and set aside

Heat 3tablespoon vegetable oil and fry the diced tomatoes and peppers. Taste for seasoning and drop from heat..

Or eat your roasted plantains with fried groundnuts..
