Jam Scones

Steps

Turn oven on to 180°C
Grease a baking tray and dust with flour, set aside. - 2
In a large bowl, place flour, baking powder, salt, sugar and margarine. Rub together until it resembles crumbs.

Beat eggs and vanilla essence and pour into the flour mixture. Mix together and knead for about five minutes to a soft dough.

On a floured surface, roll out half of the dough and shape it to the size of the baking tray.
Place the rolled dough on a greased baking tray.
Spread half cup of the jam all over the dough. - 5
Roll out the second half of the dough and shape it to the size of the baking tray and lay it on top of the jam in a baking tray.
Bake for 25-30 minutes until golden brown.
