Flourless Nut and Seed Cookies

Some ingredients are pre-roasted without salt. Just toast the sesame seeds and roast the almonds a bit more, then mix them together. Add salt and mix well again.

Separate the egg whites from the yolks (use only the egg whites; save the yolks for another recipe). We use natural golden sugar, ground finely to make it look fluffy and abundant. Add the egg whites and powdered sugar to a mixing bowl and mix well until the sugar dissolves.

Spoon the mixture onto a baking sheet lined with a baking mat (if using parchment paper, the cookies might stick). Spread into thin sheets as desired. The thinner they are, the crispier they will be and the less time they will need to bake. These cookies won't rise or spread because there's no baking powder. Preheat the oven to 300°F (150°C) and bake for about 20 minutes. (Baking time may vary depending on the size of the cookies and your oven's power.) Let them cool before removing from the baking mat, being careful not to break them.

Store in a container for a snack while watching TV, reading, or to keep in the car for a quick treat.
