  8. 2 canChicken stock
  9. 1 eachchicken
  10. 1 largeyellow onion, diced
  11. 1oregano to taste
  12. 1White pepper to taste
  13. 1salt to taste
  14. 1 largeCan green enchilada sauce
  15. 3 quartwater
  16. 1cumin to taste
  17. 1tortilla strips
  18. 1Cotija cheese

Steps

    roast whole chicken

  2. 2

    pull chicken

  3. 3

    sauté vegetables until soft

  4. 4

    in a large pot add chicken stock and water

  5. 5

    add vegetables, chicken, and seasons

  6. 6

    While soup cooks fry tortilla strips

  7. 7

    add beans, cilantro and corn to soup

  8. 8

    top with tortilla strips and cheese
