Greek Style Scrambled Eggs & Tomatoes (Strapatso me giaourti)

This traditional Greek recipe has been around for ages and ages, and I have been making this for as long as I can remember, but I only knew the main ingredients this recipe called for. So, a couple of weeks ago I was watching another cooking show and it seems that they have added a new ingredient, Yogurt. I thought to myself what a delicious idea adding yogurt it will absolutely give it a bit of a twist, and so I bookmarked the recipe to make at a later date.
I headed into the kitchen this morning, and had to see for myself if the taste is as good with the yogurt. I almost always have yogurt in the refrigerator, eggs, tomatoes, hmmm had all the necessary ingredients and was ready to get started on the recipe. When it was done I was so curious about the taste, so I took a fork, dipped into it and oh myyyyy, it is absolutely scrumptious. 🙂

Add about 6 tablespoons of olive oil, tomatos and sugar into a frying pan. Let this simmer until tomato juice has evaporated.

In a large bowl add the eggs, salt, pepper, yogurt, oregano and whisk until mixed.

Add the mixture into the frying pan and combine with tomatoes. Stir for 15 minutes at medium heat. You can either enjoy this on bread as a sandwich, or just as a delicious main dish.
