Ingredients

30 mins
8 servings
  • 64 ozLow sodium chicken broth
  • 5 tbspFish sauce
  • 6 tbspSambal Oelek chili paste (use less if you don't want it as spicy)
  • 5Limes
  • 2 tbspKorean chili flakes (very different flavor than standard pepper flakes, so if you can't find this just omit it)
  • 3 cupFresh bean sprouts
  • 1 canStraw mushrooms
  • 1 canBamboo
  • 1 bunchGreen onions
  • 1/2 bunchCilantro
  • 5Red chili peppers (look for red jalepenos, not the long skinny peppers)
  • 1 boxSilken tofu (if you like shrimp, use shrimp instead and add at the end of the process, not the beginning)

Steps

30 mins
  1. 1

    Break up tofu and add to large pot.

  2. 2

    Chop green onions and cilantro and add to pot.

  3. 3

    Slice and remove seeds from peppers, then add to pot.

  4. 4

    Add all canned ingredients, chili flakes, chicken broth, and sauces.

  5. 5

    Zest 1 lime into pot, then add the juice of all 5 limes.

  6. 6

    Bring to boil and boil for 10-15 min.

  7. 7

    Add more water/broth as you see fit, depending on how much broth you prefer. Garnish with fresh cilantro. Serve with rice and enjoy!
