Fresh Homemade Pasta
Watching a group of people make pasta from scratch on TV just got me intrigued and I thought I could do same in my own kitchen... got me a pasta roller on sale for $25 and found out I had all the ingredients in my pantry... fresh homemade pasta has got to be one of the easiest things to make on the planet. You basically need 3 ingredients: flour, eggs and oil. For those of us who like to pimp things up a little, you can add your spices, herbs, and so on but IN LITTLE PROPORTIONS... you don’t wanna overpower that rich classic pasta flavour. So let’s make some Pasta!

You basically need 3 ingredients: flour, eggs and oil. So let’s make some Pasta!

Pour the flour in a large bowl and whisk in all your dry ingredients

Make a well in the middle and pour the wet ingredients- oil and egg, and mix with a fork (beginning in the middle)

When it gets too hard for the fork, start kneading with your hands
- 4
Knead until the dough comes together. If it doesn’t after this, add a few splashes of water (a veeery little splash at a time, and stop as soon as the dough comes together)

Cover the dough on your counter top and let rest for 30 mins to let all the gluten particles ‘marry each other’ and then flatten out with a rolling pin: this aids the rolling process

Transfer the dough to your pasta roller and begin with the thickest setting

Pass the dough through the thickest setting 3-4 times till it comes out smooth. The dough might tear while at this stage but do not panic. Fold the dough and and repeat the process

R epeat step 7 while reducing the setting one step at a time till you get to your preferred thickness

If you’re making lasagna sheets, you can stop right here but If not, transfer the sheet to the fetucine or spaghetti portions of the pasta roller

Trim the length if you so desire
