Stewed Okoko

Okoko is a luo traditional fish which is mostly found on muddy or swampy places. It's very nice especially when deep fried then stewed. I used Chibundiro spice to add more taste to it. It turned out very delicious.

Steps

Heat cooking oil and add onions then fry till golden brown.

Add tomatoes the cook till softened. Then add chopped green pepper, red chilli and Chibundiro spice

Add 1/2 cup water and salt. Mix and heat for 2 minutes.

Dip the okoko fish and cover to simmer for 5mins.

Serve with Chibundiro Rice balls. 😋
