
Chocolate Cupcakes

This is about three different cupcake recipes and a brownie recipe mixed into what I think are the best cupcakes ever. These cupcakes can be finicky and always taste best with a high quality cocoa powder. I have never tried it with other forms of chocolate (chunks, chips, etc.) I think it will change the consistency and would not recommend it, however if someone does try it I would love to know how it goes.

Cooking Instructions

In small bowl mix boiling water and cocoa powder until dissolved completely. Set mixture aside to cool, preferably at room temperature to prevent the cocoa powder settling in the bottom of the bowl.

In another bowl mix dry ingredients; flour, baking powder, and salt. If using salted butter omit salt.

In a large bowl, beat butter and sugar until light and fluffy. (It is easiest to do this with an electric mixer, but is easily accomplished by hand as well. Add eggs to mix one at a time, beating until smooth in between. (Eggs should be room temperature, they will harden the butter/sugar mix slightly if they are cold). Beat in vanilla.

Add flour mixture to butter/sugar mix, stir until incorporated.

Add cocoa mix, stir until smooth.

Fill cups 3/4 of the way with batter. Bake at 375*F for about 15 minutes, cook time is not exact and will vary from oven to oven, the best way to tell is when a toothpick comes out of the centre of a cupcake clean.
