Ingredients

  1. 5 ozquinoa
  2. 3 ozgreen bell pepper
  3. 1 canorganic try blend beans
  4. 1 lbground turkey
  5. 1/4 packagesblue corn tortilla chips
  6. 1 cupmedium cheddar cheese
  7. 1/2 canmexican stewed tomatoes

Cooking Instructions

    Ground turkey

  2. 2

    Boil quinoa

  3. 3

    Cut up bell pepper

  4. 4

    Once quinoa is hearty, mix half large cut bell pepper and quinoa together

  5. 5

    Drain beans and add to quinoa

  6. 6

    Drain tomatoes and cut up and add to quinoa

  7. 7

    Add ground turkey

  8. 8

    In caserole dish, layer with blue corn tortilla chips

  9. 9

    On top of tortilla chips layer quinoa mixture

  10. 10

    Top with cheese and add another layer of blue corn tortilla chips

  11. 11

    Repeat layers as desired

  12. 12

    Preheat oven to 400°F

    Bake 20-30 mins

  14. 14

    Let stand
