Preheat oven to 425°F. Lay parchment paper or use cooking spray.

Stir coating mix in bowl and set aside.

In another small bowl, beat 2 eggs.

In third bowl, place shredded coconut

Hold shrimp by tail. Dip in egg, panko mix, egg again, shredded coconut.

Bake on middle rack at 425°F for 15 minutes or until coconut is lightly toasted. Turn shrimp halfway through baking.
