
Easy Chicken Fajitas

Prepare ingredients by slicing up the chicken into strips as well as the bell peppers and onion. Roughly chop your garlic cloves and chop up your cilantro for later.

In a large pan sauté your garlic in the coconut oil over medium heat. Once the garlic starts to brown add your chicken and the Tony's Creole seasoning. Stir and cover the pan and let cook for about 10 minutes. May add or reduce the time depending on how thick you sliced your chicken.

Once chicken is almost cooked through add in the bell peppers and onions adding extra seasoning if more flavor is desired. Recover the pan, reduce the heat to low and allow everything to simmer away until you are satisfied with the texture of your veggies. Cook longer for softer veggies but I prefer to have a bit of crispness so I usually only let it simmer for about 5 minutes or just however long it takes me to set up the tortillas and toppings.

Warm tortillas in the microwave and assemble your fajitas. Plain Greek yogurt is a great healthy alternative to sour cream and tastes exactly the same. Other great toppings are salsa, hot sauce, cilantro, shredded cheese, guacamole, etc. Anything you want really. You can also substitute the chicken for beef, lamb, or even salmon. Tony's Creole seasoning tastes good on just about any meat.
