Ingredients

  1. 3 1/2 lbcorned beef brisket
  2. 1bottle of dark beer such as Guinness
  3. 1 largeonion
  4. 1 tbspminced garlic
  5. 2 tbspbutter
  6. 1 cupwater
  7. 1 cupsauerkraut
  8. 1chicken bouillon cube
  9. 1/4 cuprussian dressing
  10. 1swiss cheese sliced
  11. 1habanero pepper jack sliced
  12. 1 loafdeli rye bread

  1. 1

    In a baking dish, add corned beef and 1 1/2 cups of beer. Sprinkle with the pickling spice that comes with the brisket. Cover with foil and bake at 275 for 5 - 6 hours. Baste every hour. Half way through cooking flip brisket over. When tender remove

    In a lg frying pan, melt butter. Add garlic and onion. Carmelize on med low heat

  3. 3

    In a saucepot add sauerkraut water and bouillon. Heat until just boiling and serve

  4. 4

    Toast bread. Spread russian dressing on each side of sandwich. Pile a bunch of shredded corned beef on bread. Top with sauteed onions, sauerkraut, swiss cheese, habanero pepper jack. Top sandwich with other slice of bread and eat.

cooking is a passion of mine. I started when I was very young and I had to drag a milk crate around to see over the counter. taught by a career cook (my grandmother ). I have always tried to push the boundaries of conventional cooking. I prefer cooking wild game. when I can get my hands on it, but fish is more readily available for me. I raise and butcher most of the livestock that I use for my conventional recipes. I hope everyone can find a few recipes they like in my list.
