Ingredients

  1. 1medium onion finely chopped
  2. 1medium butternut squash peeled deseeded and cubed
  3. 1garlic clove chopped
  4. 1 tspgaram masala
  5. 1 tspground cumin
  6. 2 1/2 cuplow sodium chicken or veg stock
  7. 1ground black pepper to taste

    Eat oil or butter in large saucepan. Fry the onions until soft

    Add the squash, garlic, garam masala, and cumin and fry gently for a few min stirring so it doesnt burn.

    Add the stock. Bring to a boil. Cover and simmer for 30 min.

  5. 5

    When squash is softx blend into smooth soup in blender.

  6. 6

    Add pepper to taste
