In a bowl, mix the grape molasses, olive oil, balsamic vinegar, and mustard well with a fork.

Set aside about half of the sauce, and pour the rest over the chops.

Toss the chops thoroughly to coat, then sprinkle with the herbs, freshly ground black pepper, and coarse salt.

Arrange the chops in a single layer in a large, shallow baking pan.

Bake in a preheated oven at 400°F (200°C) for about 40 minutes, until golden brown. Do not turn them over.

Peel, wash, and cut the potatoes into large chunks.

Boil the potatoes in salted water for 5-6 minutes, just until they can be pierced with a fork.

Drain the potatoes and return them to the pot. Cover and shake the pot by the handles 2-3 times to rough up the edges.

Pour 3 tablespoons olive oil into a baking pan and place it in the oven while it preheats. Spread the potatoes in the pan, toss to coat with oil, and sprinkle with oregano, coarse salt, and pepper.

Fifteen minutes before the potatoes are done, turn them once and sprinkle generously with sesame seeds.

Serve the chops and potatoes with the reserved sauce.
