Sweet Pork Loin Bake with Potato Crisps

Steps
- 1
In a fry pan, melt butter and add onions, fry until nearly soft. Then add pork loins, mix around and fry until the pork is coloured.
- 2
Add the cup of cider and fry on high for one minute. Add the apple and julienned carrots and let soak for a minute on low. Then add the balsamic vinegar.
- 3
Peel and boil potatoes with salt (optional) for 10 mins - par boiled. Take them out and set aside. Cut into cubes about an inch and a half square. All ready to roast.
- 4
Put all the pork loin mixture in a large in diameter dish so all the pork loins are spaced out together. Lay flat with the carrots etc. all around them. Pour over your honey spread across, and the granulated sugar all over.
- 5
Put in the oven on 150°C or gas 5 for 20-30 mins . Turn the Pork Loins over on top to brown a little and again after 10 more minutes. Put your par boiled potatoes in a roast pan with veg oil or olive oil to roast nice and crispy. You could have sweet peas on the side if you like, too..
- 6
When plated up there should be some juices to pour over each plate, lovely sweet taste but not too sweet.
