Place Soup ingredients in slow cooker and cook on low heat.

Place Saute ingredients in a large pan and saute until onions are translucent and mushrooms cooked. Then add to slow cooker.

Cook bacon in the same pan until it is about half way done (flexible with some fat still on). There should be a good amount of bacon fat in the pan. Remove bacon and break into small pieces.

Break bread into small pieces and cook in the bacon fat until it has reached desired firmness. I like mine golden / brown with a touch of char. All the while, adding the bacon pieces back into the pan while the bread is cooking. I like my bacon done crispy.

Once that is done cooking, put the topping into a mixing bowl and mix well.

When soup has reached desired thickness it is ready to serve. May cook soup on high heat for quicker results. Ladle into bowls and add topping.
