Ingredients

  1. 7rashes smoked bacon - Sliced
  2. 2 clovescrushed garlic
  3. 2shallots - finely chopped
  4. 100 gunsalted butter. 2 X 50gms
  5. 375 gsliced Portobello mushrooms
  6. 200 gsliced swiss brown mushroom
  7. 100 mlveggie stock
  8. 625 gveal tortellini
  9. 1 teaspooneach of dried oregano and basil
  10. 400 mlfull fat cream
  11. to tasteSalt and pepper

Steps

  1. 1

    Add bacon to pan with a touch of olive oil. Lightly colour

  2. 2

    Add shallots, garlic and cook till soft

  3. 3

    Throw in the mushrooms, herbs and cook till mushrooms are soft. Add 50g of butter while cooking mushrooms.. ohhh.. Don't forget the salt and pepper here!!

  4. 4

    Once soft add veggie stock and let it reduce by 3/4.

  5. 5

    Add cream and let it simmer for 15 minutes

  6. 6

    Finally add the remaining 50g of butter to thicken up sauce.

  7. 7

    Note: use a pinch of corn flour to thicken up cream sauce if need be

  8. 8
